Victoria Sandwich, a birthday cake for moi!

The cooking virus in this household is contagious! Everyone is in the cooking mood, and even Mr H decided to bake a classic Victoria Sandwich for my birthday! A total Iron Chef baked-off! It is very thoughtful of him to bake me a birthday cake, he even called up his mum in UK and asked for the recipe! I am honored.

The good ole mum’s secret recipe works like a treat. The cake is soft and delicious, with extra icing and jam filling for self indulgence. I don’t particularly like to celebrate birthday, is just another year older, more wrinkles, and no more wiser. I think the best thing about birthday is having a yummy birthday cake. That’s what is all about. :)

And here’s Mr H sharing his “secret” recipe. He said the secret is the weight of the flour, butter and sugar should be the same as the weight of the 3 eggs you using.

Ingredients

1. 3 Eggs
2. Self raising flour (same weight as 3 eggs)
3. Caster Sugar (same weight as 3 eggs)
4. Butter (same weight as 3 eggs, softened)
5. 1 tbsp Vanilla Essence
6. Strawberry Jam
7. Icing Sugar (we used ready-made Betty Crocker icing)

Method
1. Blend butter and sugar together until mix well together with a wooden spoon.
2. Add 1 egg and 1/3 of flour into the mix and keeps blending.
3. Then add 2nd egg and 2nd 1/3 of flour and keeps blending.
4. Add 3rd egg and 3rd 1/3 of flour and keeps blending until soft and fluffy.
5. Add vanilla essence and fold it in with the wooden spoon.
6. Pour half the mix in a cake tin, and the other half into another one.
7. Bake them in a pre heat oven at 180°C for around 20-25 minutes.
8. Set aside let it cool down for few minutes, then take it out of the cake tins.
9. Spread the strawberry jam evenly on one of the cake.
10. Ice – and as is the family tradition – create a snow scene.
11. Sprinkle some hundreds and thousands as final touch.
