
Is it wrong to start thinking what food to make for this Christmas already? Hence, I present you the pistachio chocolate marshmallows.
Trick ‘cha! These were actually made for the Halloween over the weekend. I actually had not prepare anything for the Trick or Treaters, so decided to churn up these quick and easy pistachio chocolate marshmallows as back up just in case. But alas, none of the Trick or Treaters came to knock on our door. Oh well, none for them, more for me! Ha!

I am actually not big on marshmallow on its own, I found them too sweet. You see, I don’t grew up with marshmallows, there was no marshmallow roasting around the camp fire in my younger years and definitely no hot chocolate with a marshmallow on top. So I guess I simply can’t see the attraction of eating a bouncy lump made out of sugar and egg white.
On the other hand, the Pom can easily eat a whole pack on its own, which I find quite disconcerting. I prefer them with a cup of coffee, or like what I did – coated them in chocolate. I had some pistachios in the pantry so decided to roast them, then roughly chop them up and sprinkle on top of the marshmallows. Have to say the simple marshmallows instantly looks like a million dollar with the shiny coat of chocolate and the speckles of pistachios. Did I mention how easy it is to make? I definitely will make them again for many special occasions to come.

Pistachio Chocolate Marshmallows
Ingredients
1 bag of marshmallows
200g dark chocolate
1 tbsp vegetable oil
30g pistachios, roasted and roughly chopped
Methods
1. Melt the chocolate in a heat proof bowl over a saucepan with hot simmering water. Do not let the water get to the chocolate.
2. Once the chocolate is melted, add vegetable oil and stir well. Set aside and let it cool.
3. Roast the pistachios and roughly chopped.
4. Dip marshmallow in the chocolate sauce and make sure is well coated, then rest it on cooling rack.
5. Sprinkle chopped pistachios and let it rest until the chocolate is set.
6. Try not to eat all at once, like that is gonna happen.

Marshmallows are a bit too sweet for me as well, but these look beautiful! I love the contrast of the bright green pistachio atop the dark chocolate.

Yum! They look so good! I’m not a big fan of them on their own either, they are very sweet. Though I used to love warming one up in the microwave for 10 secs when I was younger, cos they would expand so much! Aww too bad you didn’t get any trick or treaters, they missed out!

yum, what a great idea. they would make very easy petit fours. i find packet marshmallows very sweet but when they’re toasted over a naked flame, mmm bliss. i blackened a few forks over the gas flame at home (ha, mum never found out!). fresh marshmallows are another realm of happiness altogether!

I’m like the Pom. Could eat a whole bag of plain marshmallow no problem. BUT these look even more divine. Paired with some crunch and some extra cocoa sweetness, they would be irresitable.

just wanted to ask is it necessary to add the oil…would it make that much of a difference if i dont add it? also, if it is necessary then which oil would be best?
depends on where you are. Vegetable oil is to stop the chocolate solidified too quick, especially during winter time. The oil makes it more pliable and also gives it a sheen. I used canola oil, it works fine.
