Ice Kacang (Ais Kachang)

Summer is here! All I can think of in this hot weather is a big bowl of shaved ice, with some grass jelly, peanuts, attap chee, corn custard, then drizzle with some gula melaka syrup and Carnation evaporated milk…. hor hor hor.. ICE KACANG, I WANT IT NOW!!!
When I had my birthday last October, I demanded a Sunbeam Ice Shaver for present. Oh man, how good the ice shaver is to make ice kachang! (*disclaimer : It is not a Toy!) It is so easy to use, just put some ice cubes, and grind it goes!

I am sure a lot of you know what Ice Kachang is, so there is no need introduction really. You can order Ice Kacang from most of the Southeast asia restaurants in Sydney such as Mamak at Haymarket, or Kopitiam in Ultimo. There are many versions of this Ice Kachang, some with gula melaka syrup, and some with rose syrup. I am particular drawn to the gula melaka syrup version. But the best version is definitely make it your own, because you can pour as much gula melaka on top as you like!
Here’s a quick run down of the ingredients to make Ice Kachang:
1. kidney beans cooked
2. red bean cooked and mashed a little
3. grass jelly thinly sliced
4. attap chee
5. cream corn
6. roasted peanuts
7. sweet jelly (colored in red, to keep its authenticity)
8. Gula Melaka Syrup (Palm Sugar)
9. Carnation evaporated milk
Methods
1. prepare your gula melaka syrup before hand. Roughly chop some gula melaka, and put in a saucepan with a cup of water under medium heat. Add half cup of sugar, and let it boil, till thickened and reduced. Set aside and let it cool down.
2. Add a bit of everything from the list in the bowl EXCEPT cream corn and peanuts, they go on last.
3. Then pile the shave ice in the bowl, use hand to form into a giant ice cone.
4. Put a dollor of cream corn on top, then sprinkle some peanuts.
5. Pour the gula melaka syrup all over, then drizzle with the evaporated milk.
EASY as A. B. C! (Funny thing is, another name for Ice Kachang is ABC)
