Midori Apple & Sultanas Filo Cups

This is a simple quick fix for those who has a sweet tooth. I had some strawberries soaked in Midori left in the fridge couple of days ago, so I thought I will use them to make a strawberries crumble in filo pastry cup instead. If you are lazy to make a crusty base like me, the filo pastry works like a treat! But the trick is not to get the pastry wet and soggy, or else it can be a disaster. Next time I will also try and soak the strawberries in Botrytis rather than Midori and see whether it will taste different.

This is a very simple recipe. I just made it as I go along with whatever ingredients I can lay my hands on in the pantry. Firstly, I filled three of the holes in the cupcake baking tray with filo pastry, tuck the long edges back into the cups. If you don’t have cupcake baking tray, porcelain ramekins will do just fine.
Then, make some butter crumble as how you would normally do. For me, I just use some softened unsalted butter, with a cup of flour, and a cup of sugar in a mixing bowl. Then use fingers and start kneading them together into crumble.

Now it’s time to fill the cups. Firstly, put some of the crumble at the bottom of the cups, then top with some sultanas. Next, if you have custard cream, then add some. Since I don’t have any, so I straight onto next step, topping it with the liquor-soaked strawberries. I poured some of the leftover liquor juice into the cup, to keep it nice and moist inside. Finally, sprinkle the rest of the crumble on top of the cups and cover up all the strawberries. I also sprinkled some caster sugar on top as a final touch to let it caramelised when baking. Set the oven to 200°C, and cook for 20 mins or until the filo pastry is golden brown. Voila!
The filo pastry is nice and crunchy, and the strawberries crumble inside is moist and with a hint of sweet Midori. Next time, I will try to get some custard, and perhaps a nice scoop of vanilla ice cream to go with it.
