Cult-favorite New York slice joint brings its iconic SoHo Squares and late-night slice energy to Siegen Lane near LSU

Prince St. Pizza Makes Louisiana Debut in Baton Rouge Oct. 9Baton Rouge, LA  (RestaurantNews.com)  Prince St. Pizza, the New York City-born pizzeria known for its Sicilian-style square pies and signature pepperoni-loaded slices, will open its first Louisiana location Friday, Oct. 9, at 6556 Siegen Lane.

The walk-up counter and late-night hours land on one of Baton Rouge’s busiest retail and dining corridors, a short drive from LSU and the game-day traffic that fills the area every home game. Siegen Lane also marks the first Prince St. Pizza in the state of Louisiana for development partner Lawrence Kourie, the founding and largest franchise owner of Dave’s Hot Chicken, who came aboard in March to lead the brand’s push into new markets.

The Baton Rouge shop will celebrate its grand opening Friday, Oct. 9, at 11 a.m. with a free slice of pizza for the first 50 people in line. Jon Jones, the former two-division UFC champion who signed on as a partner in the shop in August, will also appear at the grand opening.

Louisiana gets the full lineup from day one, including the Spicy Spring, a fra diavolo square with thick-cut pepperoni cups baked onto focaccia-style crust, and The Naughty Pie, layered with spicy vodka sauce, ricotta, mozzarella and hot honey. Classic New York rounds, Caesar and Italian chopped salads, smoked mozzarella sticks and desserts round out the board. Sauce is made in-house daily, and the dough runs through a water filtration process built to mimic New York tap water.

“We designed this kitchen around volume, because nothing in this city happens quietly,” said Kourie. “Every person behind that counter was put through the same training our New York crews get. Opening on a Friday in October was intentional. Football weekends, a campus a few minutes up the road and a town that stays out late is about as close to Manhattan hours as the South gets.”

Founded in Manhattan’s Nolita neighborhood in 2012 and rooted in the Morano family’s generations-old recipes, Prince St. Pizza built its following on SoHo Squares and the philosophy that if you can put it on pasta, you can put it on pizza. Siegen Lane joins a map that already includes Las Vegas, Chicago, Los Angeles, Dallas, Nashville, Toronto, Miami, San Diego and Arizona.

“Prince St. Pizza was built on a simple idea: make a slice people can’t stop talking about,” said Lawrence Longo, CEO of Prince St. Pizza. “Hand someone a square with the pepperoni curled up at the edges and they will call three friends before they finish it. That is how this thing traveled out of Nolita, one market at a time.”

The Baton Rouge pizzeria will be open from 11 a.m. to 11 p.m. Sunday through Thursday, with extended hours until midnight Friday and Saturday. Dine-in seating, takeout and catering are available.
