“I would do anything for love, but I won’t do that….”
Ok, I’ll stop now. At least my version of Meatloaf is edible, and tastier.
It’s D’s birthday today, so decided to invite him over and will cook him whatever he feels like for this special occasion. He suggested that he would like to have meatloaf for his birthday since is one of his favorite dish, especially the one with eggs hidden inside. So with a bit of help and advice from him, I cooked up this dish for dinner tonight.
To many Australians, meat loaf is a very nostalgic winter warmer, just like mum’s home cooking. A great meal loaf usually can be judged from the TLC and effort put into it. It is definitely a centre piece on the table while family stories are being shared and cherished.
This is my version of the hidden eggs Meat Loaf.

Ingredients
1. 500g beef mince
2. 3 hard-boiled eggs
3. 1 egg white
4. 1 onion finely chopped
5. 3 cloves garlic finely chopped
6. half carrot, grated
7. 5 rashes of bacon
8. 2 tbsp dry mixed herbs
9. 1 cup of bread crumb
10. 3 tbsp HP sauce
Method
1. Hard boil 3 eggs. Once cooked, let them cool down, then peel the eggs and set aside.
2. Over high heat, drizzle a frying pan with olive oil, sauteed the onion, garlic, carrot over high heat.
3. Once cooked, put them in a large mixing bowl to cool down.
4. Add mince, bread crumb, mixed herbs, egg white, HP sauce into the mixing bowl. Using your hands (make sure your hands are clean), give the mince a good massage and mix all ingredient well. Season with salt and pepper.
5. Preheat oven to 180°C.
6. Line base and side of a deep loaf pan (7cm deep) with rashes of bacon, with the sides hanging on the side of the pan.
7. Spread half of the meat mixture in the bottom. Push the meat in to fill all the gaps.
8. Use your fingers, push the meat slightly along the centre of the tray and make 3 dips.
9. Put the eggs into those dips, then fills the loaf pan with the rest of the meat mixture.
10. Fold the bacon inwards and wrap the loaf nice and tight.
11. Put in the oven and cook for 30 mins.
12. After 30mins, take it out and drain all the excess fat.
13. Transfer the meat loaf from the loaf pan to a baking tray.
14. Put it back in the oven for another 30mins or until the bacon is nice and crispy.
15. Stand for 5 mins, slice and serve.

I think it is a very chinese thing to put an egg in the middle of the meat loaf. But it is an inspiring recipe.
The egg thing actually that’s how D’s mum cooked it when he was young. He is the one who taught me how to do it. If you do a google search, there are a lot of other people doing the meatloaf with eggs inside, so is quite common.
How exciting is this? A meatloaf recipe… I’ve always read about meatloaf in books and wondering what on earth it might be, and now i can live the meatloaf dream. its looks fantastic, i’ll keep you posted on the results. Katie
It’s funny, I was just thinking it’s a very german thing to stick an egg in the middle of a meat loaf, ha! This is one of the only meat dishes I manage to cook decently, being a veg, and the egg thing is very cute. Yours looks better than mine though… mine always comes out looking a bit dowdy.

in romania, it’s considered a christmas/easter dish [called "drob"]; we don’t wrap it in bacon, though
