Easy Peasy, Berry Fizzy.
Have to keep reminding myself, take picture first before blasting the jelly off into the air! This particular is so soft that the tip snapped off right after I finished filming the boombox test, and I didn’t even get a chance to take a proper shot of the jelly! I was close to not posting this jelly as I wasn’t entirely happy with it, but taste wise is definitely one of my favourites. It is a strawberry jelly mixed in with carbonate soft drink, the result is a BERRY FIZZY!
This jelly is wobbly-licious, the carbonate soft drink makes the raspberry jelly light and fizzy. I’ve made one ages ago using the same technique with moscato champagne, but this time I simply used a fizzy drink such as Sprite.
It is hard to keep the bubbles suspend in the jelly when set, because by the time the jelly set, all the carbonated gas will be already escaped and the drink is flat. There are a few tricks how to incorporate some bubbles back into the jelly and the easiest one which I used, is by whisking the jelly with a skewer when the jelly is half set to reactivate some of the carbonated bubbles in the soft drink again. Simple right? The result is a light, refreshing, fizzy jelly, perfect for the summer. You can also add strawberries and whatever take your fancy really.

BERRY FIZZY 2 tbsp strawberry flavour jelly powder 100ml hot water 140ml Sprite 1/2 sheet of gold leaf Method 1. Add hot water to jelly powder, stir to dissolve. 2. Pour Sprite into the mixture and mix well. 3. Add gold leaf and stir the mixture with a skewer to break the gold leaf into smaller speckles. 4. Pour mixture into jelly mould, transfer to fridge and let it set for 20 minutes. 5. Stir it vigorously with a skewer stick to re-reactivate the carbonated bubbles in the jelly and also spread the gold leaf evenly. 6. Let it set completely.
