Breakfast, the most important meal of the day.

Sadly I don’t eat breakfast very often, bad boy I am… I know…

Then I discovered granola. Who’d have thought it is so easy to make granola? Just add some rolled oats with dried fruits and sunflower seeds or pumpkin seeds into glorious brown sugar, maple syrup and then toast it! I think I would eat anything that is coated in brown sugar and maple syrup, no questions ask.

I am still on the ‘molecular gastronomy’ rampage with my siphon canister at the moment and foaming anything and everything! Chocolate, cream, you name it. Then I also discovered foaming Greek yoghurt! Boy, the end result is a light, fluffy, tangy foam of morning glory!

Hence, my own version of homemade toasted granola, with Greek yoghurt foam and the Weetbix sable was born. I think I will eat breakfast more often from now.

TOASTED GRANOLA, GREEK YOGHURT FOAM, WEETBIX SABLE
Original recipe by A Table For Two

Toasted Granola
Ingredients
1 cup rolled oats
1 tbsp pumpkin seeds
1 tbsp dried apricots
1 tbsp dried canberries
1/4 cup whole almonds
1 tsp cinnamon powder
2 tbsp brown sugar
3 tbsp maple syrup (the real stuff)
2 tbsp canola oil

Methods
1. Preheat oven to 150C.
2. Mix brown sugar, maple syrup, canola, cinnamon powder in a mixing bowl and whisk all together.
3. Add rolled oats, pumpkin seeds, apricots, canberries, almonds into mixture. Stir with a spatula until all the ingredients are nicely coated with the mixture.
4. Spread the mixture evenly on a baking tray lined with baking paper sprayed with a little bit of oil, or use a silpat.
5. Put in oven for 30-45, rake the mixture with a fork every 15 mins interval. Toast it until the rolled oats look golden brown.
6. Take it out and let it cool, it is ready.

Weetbix Sable
Ingredients
1 bar WeetBix
25g milk powder
25g brown sugar
25g cold butter

Methods
1. Preheat oven to 180C.
2. Crush WeetBix inside a mixing bowl into crumbs, then add milk powder, sugar, and butter. Knead the butter into the mixture by using fingers until it forms a breadcrumb like texture.
3. lay a sheet on baking paper on a baking tray, spread the mixture evenly and roll out to about 3mm thickness.
4. Put in the oven for 10 minutes or until is golden brown. Take it out and let it cool slight before handling it.
5. Once is cool enough to handle, cut the sable into rectangular piece, 1.5cm x 8cm. Work fast before the sable is completely cool and will be too brittle to be cut anymore. Then set aside and let it cool completely ready for use.
6. Make 6 sables, then crush the rest into crumbs.

Greek Yoghurt Foam
Ingredients
1 cup greek yoghurt (the good stuff)
1 cup thickened cream
kitchen tool: siphon canister

Methods
1. Add yoghurt and cream into mixing bowl, whisk until light and creamy, around 10minutres by hand.

2. Pour the mixture into canister. Pump 2 CO2 chargers into the 1L iSi Siphon Canister.

3. Shake vigorously, and ready to be used.

TO SERVE
1. Use a tall glass, put a few spoonfuls of granola at the bottom.

2. Squirt yoghurt foam over the top.

3. Garnish with Weetbix Sable, and sprinkle some pistachio crumbs.
