What are you doing this chilly winter weekend?

For me, it is always the perfect time to stay in, and get creative in the kitchen and fill the air with freshly baked breads and cakes. Also do not fight the temptation of sloth on the couch, with a bowl of mama’s spaghetti or the comforting chives dumplings and watch SBS Food Safari DVDs back to back!

I keep missing a few episodes of the Italian Food Safari while being shown on TV and now I am really looking forward to watch it all over again from the beginning on DVDs. The Italian Food Safari show are presented by food explorer Maeve O’Meara and legendary Melbourne chef Guy Grossi (Grossi Florentino, Mirka at Tolarno).     I would have to say mashed potato with gravy is my ultimate comfort food. I love heating last night’s leftovers and eating it slowly with a teaspoon in front of the tv.

    For the first 10 kilometres breakfast of frittata di asparagi with crispy bacon,next 10 kilometres lunch of minestrone, next 10 kilometres dinner of lamb shanks with potato mash and finally the last 10 kilometres would be a sticky date pudding with king island cream. Oh I forgot the next 2 kms….snooze.

    My favourite comfort food for a Food Safari marathon would be pumpkin soup. As I watch the presenters of Food Safari put so much effort into showing me lovely food I remember the effort I put into making my soup … then i realise i get to relax and slurp my warm soup while they still do all the work (:

    For me it’d have to be a laksa with the lot! I love having my laksa with 2 types of noodles.. rice and egg noodles with lots of fish balls, fish cakes, tofu puffs, half a boiled egg and crunch-licious bean sprouts! Nothing beats comfort but a nice big bowl of laksa!

    My perfect meal to watch a night of food porn would involve a extremely large bowl of spaghetti with lots of parmesan, lots of lots of garlic bread and a generous glass of shiraz. Since, I’d need to be eating to get through at least a couple of episodes… I better throw in a big serve of apple crumble drizzled with cream and a hot chocolate (with marshmallows, of course!).

    Hi, I’d have a stash of different breads and fillings on hand. Then I’d make toasted sandwiches with a side of chips and pickles; my type of ploughman’s lunch.
    I need to have food that can be eaten with one hand as my other hand would used for taking down recipes on paper!

    My food cravings are usually triggered visually by photos of gorgeous food or watching food shows like Food Safari. So my favourite comfort food would depend on whichever episodes I was watching for the marathon. It would be a big bowl of thousand year egg congee and fried bread sticks for the Chinese episode, a large pile of edamame for the Japanese episode, homemade ricotta gnocchi for Italian, some toasty quesadillas for Mexican, spicy gumbo for American – and so on. As long as it’s hot! And something fresh out of the oven is also great for winter comfort! I guess there would be a lot of running back and forth between the kitchen and TV with each episode – followed by a food coma the next day!

    My ultimate comfort food for these cold winter nights would have to be a homemade pear and butterscotch pie with a bit of cinnamon served with a scoop of ice-cream which sounds weird since it’s freezing these days but the combo of a hot pie and cold ice-cream is perfect :) for savory comfort food, I can’t go past spaghetti bolognese sauce eaten with hot bread instead of pasta.. there’s something strangely about scooping up the sauce with bread mmmm so good!!

    Gyoza. Defintely fresh, hand made , steamed and lightly fried gyoza. Filling dictated by weather, by whim, and by what’s left in the fridge. A little sweet, a little sour, a little hot sauce on the side.
    A glass of wine, then curl up on the couch and watch a DVD (Food Safari of course!).

    Hmmm, too many delicious dishes to choose from but we would more than likely plan an Italian inspired meal – maybe a chicken ball soup or a lentil and vegetable served with lots of parmesan and parsley – warms the heart and not too many calories, also good to have some leftover. Then onto the main – maybe a saltimbocca with cavolo nero on the side and crispy rosemary and garlic potatoes…I’m not really into deserts but lately have been making a flourless orange cake and frosting this with a dark chocolate ganache and serve with a berry coulis and cream – really easy but impressive and delicious…

    It simply has to be an ongoing italian banquet treat for me, if it’s Italian food safari I sitting through, no other cuisine would possibly do! Cheeses, salami, olives, figs, minestrone, pasta, breads, canolli and red wine, no matter the season, Italian cuisine is simply divine. To accompany Maeve all over again and take lessons from Guy and all his friends, would be a culinary joy from beginning to end and what better way to spend a couple of chilly winter days!

    Roti for mopping and mango juice is so nice.
    For a marathon weekend, the same the next day…
    Reheated curries get better in taste and bouquet!!!

    Oh, it’s got to be a delicious bowl of meaty, aromatic bolognaise, spooned onto a fresh crusty loaf of bread – Turkish style, accompanied by great big serves of mulled wine. Couldn’t be better!

    The ultimate stay in weekend is cooking and eating something that I learned from my grandmother – homemade pasties with homemade tomato sauce. Not very Italian, I know, but my grandmother’s family came from Cornwall, the home of pasties and there is nothing better than eating them hot from the oven while watching a great food DVD. There is also the bonus is having some to take to work after the weekend to share with workmates, because there is no point making one, better to make twenty.

    Watching all the recipes has made my mouth water. I do love a bowl of Minestrone in winter. Eat mouthful is warming andintoxicating. It’s scent and taste brings me back to happy times when my grandparents were still alive. My mother is a master at perfecting the dish and I will pop by her place whenever she makes it. I was very exicited to see it featured on Italian Food Safari recently. I think now is the time for me to start perfecting my own version.

    My favourite comfort food is definitely a warm toasty bruschetta with roasted peppers and topped with prosciutto and cheese, followed by a steamy minestrone and rosemary foccaccia (with bottle of vino always :-) , and to top it off some apple strudel and cream and a nice vin santo or port with crostoli. It’s the best and sharing the meal with friends even better.. mmmmmmm buooooonnnoooo

    Puy lentil and vegetable soup … a nutritious and guilt-free comfort food …and with a dash of chopped birds-eye chili, a handful of fresh parsely and grated pecorino on top, some lightly-toasted sourdough multigrain on the side, and a glass of pinot noir in hand! Sounds posh? Easy and cheap to prepare!

    My ultimate procrastination lately during assessment time has been food porn and baking, but for food safari I NEED a big bowl of spaghetti with fresh tomato sauce and a generous amount of parmesan, hot enough to steam up my glasses. Bake the cake, make the pasta and watch a few episodes while the cake bakes. Then of course you need to consume another episode while you consume your cake. And then after watching all of that cooking you’re inspired to make something else!

    Basically anything I don’t have to look at to eat. When I am absorbed in telly I hate having to look at what I’m eating to, like, make sure the food is actually on my fork… So that leaves junk food or fruit. Hmmm. I’ll take the junk, thanks :)

    One of my favourite DVD-watching foods is rice cakes, topped with my favourite meats, cheeses, spreads and vegetables. I love pancetta and camembert, or salami, homemade tomato chutney and vintage cheddar. Shaved chicken breast, iceberg lettuce and red onion is delicious too! It takes so little to inspire me, I already want to run off to the kitchen and try some new combinations. The reason it’s so great is that it’s hard to mess up, and you don’t end up with crumbs everywhere so long as you don’t drop it face down in your lap!

    Today’s comfort food is… cheese sandwich with iced milk! Serving suggestion: thick slices full fat vintage tasty on super thick non-nutritious white bread. Sandwich and squish until bread and cheese is one. Chew and sip alternatively with full fat milk served on ice.

    My dad always gave this to me as a snack. I believe it was the extent of his food preparing skills. I miss my dad.

    my favourite food safary week end marathon would be of memories gone by of family get togethers making my Papa’s sicilian sausages wrapped in thick wet newspaper tossed over hot coals consumed with mum’s home made sour dough bread (Ragusa Style) baked in wood fired oven ; sliced in half with a sprinkling of EVOliveOil, oregano, parmesan, sun dried tomatoes & slices of capocollo re-heated in oven wrapped & tired on a tea-towel dangling from a frasca (twig) ; sitting on a rock eating & drinking Dad’s vino after a long successful hunting of field mushrooms & wild leeks only to returne & find my mum cooking a hare (caught by my brothers) a spezzatino with olives,herbs & a sprinkling of wine vinegar. mmm!
    oh yeah not forgetting a big siesta…

    I’m just imagining an afternoon in front of the TV, having a Food Safari marathon. Occasionally, I’ll struggle out of the beanbag to make some soft-boiled eggs to go with a couple of slices of golden toast that’s dripping with butter. I may sprinkle some truffle salt on the egg as well….

    Oh Maeve is comforting enough! One does get hungry and these delicious episodes can be watched end to end. Stimulating, salivating, scrumptious fare. It is wonderful how Maeve manages to procure some great ethnic cultures, cooked right here in homes in Australia. Comfort food – oh, please smell my gorgeous aubergine lasagna. Frying the aubergine slices in a pancake batter whilst passata simmers on the stove. Layering the aubergine then smothering it with rich, tasty, herby tomato sauce. Lashings of mozzarella – ah I am comforted already! Delicious hot or cold at any time of the day, served with a small glass of shiraz this dish is the perfect accompaniment to Maeve’s gastronomic wonderings. If friends were dropping by to warm my couch with visions of Food Safari, we could stretch to a fresh, lovely, crusty bread roll; an elegant antipasto containing all the food groups could also be snacked on for hours whilst enjoying Maeve on Food Safari. (Oh, I think I just dreamed …)

    I loved particularly enjoyed the recent Jewish episode. This style of food is a bit of an anonomly to many of us. They do eat well! The Chondola (occo buco) with beans was amazing as was the delectable orange cake. I plan to cook the orange cake s-o-o-n but this sweetness brings to mind a delicious viennese apple strudel. Excellent comfort food that is not too sweet; wholesome yet delectable. Ultra-thin rich pastry, sprinkled with toasted breadcrumbs and crushed nuts. Fresh apple slices, sugar, cinnamon, nutmeg and butter. Yummy with latte or cappuccino, you will be comforted and alert for all Food Safari episodes. If too much caffeine is imbibed, serve strudel with a milky tia maria, you can never have too much strudel and Maeve will soothe from the other side of the kitchen, displaying her innate ability to gain the utmost from her visitor’s cuisine. Food Safari is definitely one of the best shows; it can be viewed time and time again. (I even remember the theme music ohh oooooohhh) Go Maeve!

    Ok. Today it’s lovely, friendly tinned baked beans (heated until the sauce is thick and rich) on thickly cut fresh toasted sourdough generously slathered with butter and finished with a liberal dusting of cracked black pepper. I ate it this morning whilst watching an extremely intelligent documentary program called ‘TMZ’.

    I realise I am rather obsessed with this tv/comfort food post. I am 5 months pregnant, jobless and home alone (and would have gone mad had I not been saved by the company and companionship of our new family member, 16 week old beagle, Rusty) so television and food are pretty much all I think about 7am-7pm.

    Breakfast: Bacon and Egg + Eng Breakfast Tea
    Lunch: Toasted Sandwich + hot chips
    Dinner: A bowl of Porridge with veges, chinese omellete + pickled veges!
    Supper: My homemade pumpkin soup + 5 spice chicken wings + my warm blankey~ ^_^

    Yeap, every word just sound like FAT & CARB, but I LIKE IT! I just need a good FOOD SAFARI DVD to go with it :P

    Comfort today because it is cold and I’d love to cuddle under a rug in the lounge room watching a Food Safari marathon. I’m thinking of a homely chicken lentil curry with sweet potato chunks, red capsicum strips, fresh curry leaves, yoghurt, chilli and coriander. While Maeve weaves her magic on television, with some steaming saffron rice and fresh naan bread pleasure can be created all in the comfort of my lounge room. Oh, and take the phone off the hook… what bliss after a long week.

    Hold that thought … maybe Friday evening would be the perfect time to roll some fresh fettuccine – pasta is so much better when you’ve made it freshly. While Food Safari rolls in the background (on the tiny T.V. in the dining room) I could use the last of our autumn tomatoes to create a lovely pan with arrabiata sauce. Onions, garlic, red chilli, sliced red and green capsicums all simmering in the fragrant sauce with balsamic vinegar and brown sugar. Maeve could be displaying a Mexican kitchen where they don’t use ‘mince’ ever. Likewise, some quality beef rump strips quickly fried before adding with some thick hot salami slices …. served over the fresh simmered fettuccine. Fresh crusty bread; a glass of cabernet sauvignon, some kalamatas bowled with garlic, chilli, oil and oregano. Yay comfort food for a comforting inspiring show such as Food Safari. This food adventure stands alone and can be watched over and over again … Maeve is truly inspiring and ‘watchable’.

    Kettle corn! It would satisfy my sweet and savory tooth so I wouldn’t have to get up from the Couch for the marathon.

    Morning: Congee – with extra spring onions
    Lunch: Fusilli Pasta – tomato paste and Chorizo
    Dinner: Osso Bucco with rice

    Why? My familiar safari of foods. I love food safari :)

    Huge pot of home made Minestrone soup with heaps and heaps of different yummy veggies..bowl in the morning, bowl at lunch, bowl for dinner, just keep going back for more..but always with toasted sour dough slices with grilled fresh parmasan cheese!

    Seeing that it is winter, I love tuna casserole and shepards pie. Both made with low fat ingredients, lots of veggies and seared tuna, low fat cheese, mushrooms and peas for the tuna casserole. Both are my favourite comfort dishes during winter, I love to play with ingredients and make them both delicious and healthy. The perfect food to watch a back to back Food Safari

    Tonight, comfort food had a different meaning…. given 4 unexpected friends, the cold weather and that nobody wanted to eat out. They were happy to stay in my kitchen :) mmmm So, pressure cook the rice ready for frying. Slice the chicken and rump finely, defrost some green prawns, cube the tofu. You get the picture. No, sorry I don’t like help in the kitchen, just set the table , pour the wine and keep the conversation flowing. So tonight we could have showed Maeve how an impromptu feast is created from what’s on hand. Our comfort food was garlic fried rice, satay chicken, shredded steak (with plum sauce), deep fried tofu with capsicum, onion, garlic and chilli stir fried accompaniment. Prawns with chilli, garlic, lemon grass, grated coconut. Easy, quick, tasty and lots of fun. Worthy of a 15 minute segment on Food Safari (possibly).
    Great food, even better company, a wonderful evening. Reminiscent of Food Safari. Thanks for the memories Maeve!

    a bowl of hot steaming udon!
    I usually cook some with shiitake & enoki mushrooms, bok choy and frozen fish balls, a very quick-after-work-easy-to-make dinner while watching Food Safari!

    1st day – big plate of bean nachos, lashings of sour cream and homemade guacomale and chilli.
    2nd day – big bowl of red curry lentil soup with a crispy piece of turkish bread, followed by Lindt choccy!! These comfort foods for me make my soul sing and cuddled up on the lounge with the Food Safarito watch, with noone to disturb me, I am a happy girl!!!!

    The ultimate comfort food would be a home made hamburger with all the trimmings- good meat pattie, lettuce, tomato, fried onion, beetroot, pineapple, fried egg. Served with some double fried chips til their lovely and crispy- served with some aioli!

    My mums crispy skinned Caribbean
    Jerk Pork, served with rice, black eyed peas, and seasonal greens. With a rich onion gravy.
    It is so good my mouth is watering typing.
