Victoria Sandwich for the Queen’s Birthday!

The Pom is very inspired by the Masterchef Australia show lately, and he even suggested that he will make cupcakes after watching Julie making her “Lemon Diva” cupcakes on last friday night cooking class episode. But soon the Pom realised it is the Queen’s Birthday long weekend here in Australia, he changed his mind and decided to make his British classic Victoria Sandwich for the Queen… not that four muscly dudes with moustaches in tight white leather pants singing in high pitch.
But the real queen with funny hats and corgis… not really sure which is worse.

The Victoria Sandwich is one of the cakes that the Pom has perfected after baking it over million times. Last time he made it for my birthday, and now is for his favorite Queen. A layer of strawberry jam and butter icing, sandwiched between two soft and fluffy butter sponge cakes. Dust it with icing sugar as the final touch and there you have it, the simple classic Victoria Sandwich. The Pom is making it with love for the Queen, so he decided to make a “royal” icing to pour on top, just for the Queen. Have to say the royal icing works really well, it adds sweetness and moistness to the light fluffy cake.

Ingredients
Make butter icing
140g/5oz butter, softened
280g/10oz icing sugar
1-2 tbsp milk
1. Beat the butter in a large bowl until soft. Add half the icing sugar and beat until smooth.
2. Then add the remaining icing sugar with one tablespoon of the milk.
3. Beat until creamy then add the food colouring and mix well.
4. Add extra icing sugar to thicken or a little extra milk to make more runny if necessary.
Make Royal Icing
2 large egg whites
2 teaspoons fresh lemon juice
3 cups (330 grams) confectioners (powdered or icing) sugar, sifted
Make Victoria Sandwich
1. 3 Eggs
2. Self raising flour (same weight as 3 eggs)
3. Caster Sugar (same weight as 3 eggs)
4. Butter (same weight as 3 eggs, softened)
5. 1 tbsp Vanilla Essence
6. Strawberry Jam
Method
1. Blend butter and sugar together until mix well together with a wooden spoon.
2. Add 1 egg and 1/3 of flour into the mix and keeps blending.
3. Then add 2nd egg and 2nd 1/3 of flour and keeps blending.
4. Add 3rd egg and 3rd 1/3 of flour and keeps blending until soft and fluffy.
5. Add vanilla essence and fold it in with the wooden spoon.
6. Pour half the mix in a cake tin, and the other half into another one.
7. Bake them in a pre heat oven at 180°C for around 20-25 minutes.
8. Set aside let it cool down for few minutes, then take it out of the cake tins.
9. Spread the strawberry jam evenly on one of the cake. Then the butter icing on top.
10. Put another cake on top of it. Then pour the royal icing all over and let it set.

That looks so deliciously moist and buttery and so pretty with the royal icing, very fitting for a queen! My mind boggled a bit @ Helen’s 25% comment, but with most cakes I just block out the memory of how much butter and sugar goes into them, it spoils the fun!
